Pocket Edward Takes a Hike

Yesterday, we took Pocket Edward on a hike up to Sol Duc Falls.  This falls is one of the most photographed things in Olympic National Park.  If you come to visit us at the Miller Tree Inn, we hope that you will visit the falls.  Maybe you'll see Pocket Edward!  Of course, Pocket Edward is so speedy that he got all the way to Lunch Lake and back before we got to the falls...

Introducing the New Pocket Edward

We just returned from taking the new pocket Edward on a trip to Seattle.  It was a cultural trip.  We went to the King Tut Exhibit at the Seattle Science Center.  Pocket Edward said that he wanted to see something older than Carlisle.  What a cheeky vampire!  You will notice that the new Pocket Edward has a jacket on and is ready to go.

Parmesan Baked Eggs

We had Parmesan Baked Eggs for breakfast the other morning and were asked for the recipe.

Heat oven to 350 degrees.  Spray individual ramekins with cooking oil.  Spray the same number of ramekins as you want eggs.  Crack one egg into each ramekin. Measure one Tablespoon of half and half and pour on top of each egg.  Measure 1 Tablespoon of Parmesan cheese and put on top of the egg with half and half.  Put ramekins in pre-heated oven and bake for 12-15 minutes until the egg whites are cooked and set.  When finished baking, we scoop out and serve over hashed browns.  When cooking a number of eggs, we have also used a muffin tin instead of individual ramekins.  Whichever is used, it is important to spray the container well, so that the eggs come out easily.  Enjoy!
