Happy Memorial Day weekend! We just had another request for our Gingerbread Pancake Recipe, so we thought we would post it today.
1 1/3 cups pancake mix
1/2 teaspoon ground ginger
1 teaspoon ground cinnamon
1/4 cup molasses
1 1/4 - 1 1/2 cups water depending on how thick you like your batter
Cook on hot, greased griddle or pan until bubbly and then turn over.
1/2 cup sugar
1 Tablespoon cornstarch
pinch of ground nutmeg
1 cup hot water
2 Tablespoons butter or margarine
1/2 teaspoon grated lemon rind, fresh or dried
2 Tablespoons lemon juice
In medium sauce pan mix sugar, cornstarch and nutmeg. Gradually add in water. Cook stirring over medium heat until mixture is thick and clear. Add butter, lemon rind and lemon juice, stirring until butter melts. Serve hot, over hot pancakes.

In the past 24 hours, Pocket Edward had been in 5 different countries. He was in Northern Ireland, the Republic of Ireland, Wales, England and now the USA. It has been an exhausting day for the humans in his life, but Edward is none the worse for wear. He did help us bags around. It is nothing for him to lift a few suitcases!

Yes, Pocket Edward was in Ireland. Dublin to be specific. He has moved on, however and is currently in another country. Green fields and lovely coastliine abound. Some of Susan's (the resident innkeeper) family lives here...

It is legal to go to a pub in this country, even if you are under 21. Since Pocket Edward is only 17...we let him come with us. We enjoyed the food here, Edward just waited for us, of course. But we did get him to pose by one of the country's most beloved exports!
